This turned out so creamy and delicious and would pair nicely with a grilled steak or anything you'd normally serve with mashed potatoes.Ingredients | Broccoli Pot Pie Recipe½ cup water1 pound fresh broccoli, chopped2 green onions, chopped4 ounces cream cheese1 tablespoon butter¼ teaspoon salt¼ teaspoon ground black pepper½ cup shredded Cheddar cheese2 tablespoons real bacon bitsDirectionsTurn on a multi-functional pressure cooker (such as Instant Pot®). Add water, broccoli, green onions, cream cheese, butter, salt, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 minutes for pressure to build.Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.Using a potato masher, mash mixture to desired consistency. Add Cheddar cheese and bacon. Stir until cheese is melted.This also works great without the Cheddar cheese and bacon, for those who are watching their calorie intake. You'll just need to finish it off with more salt.
