Deliciously soft sweet potato rolls that disappear so fast you will wonder where they all went.Ingredients | Hawaiian Sweet Bread Rolls¼ cup warm water1 (.25 ounce) package active dry yeast1 cup milk5 tablespoons unsalted butter½ cup white sugar1 ½ teaspoons salt¼ teaspoon ground cinnamon2 cups mashed cooked sweet potatoes1 teaspoon lemon juice1 large egg, slightly beaten2 cups all-purpose flour, or more as needed2 tablespoons salted butter, meltedDirectionsCombine warm water and yeast in a measuring cup; stir to dissolve. Set aside.Heat milk, unsalted butter, sugar, salt, and cinnamon in a small saucepan over medium heat, stirring occasionally, until butter melts and milk begins to bubble.Place mashed sweet potatoes in a large mixing bowl and pour milk mixture over top. Add lemon juice and mix until smooth. Let cool to lukewarm, 10 to 15 minutes. Add egg and yeast mixture; blend well.Stir in 2 cups of flour and beat with an electric hand mixer at medium speed, about 3 minutes. Add enough additional flour to make a stiff dough. Turn onto a floured surface and knead until smooth and elastic.Place dough in a buttered bowl. Turn dough to butter top, then cover and let rise until double in size, 45 minutes to 1 hour.Punch down and knead once more, then shape into rolls. Place on a greased baking sheet, cover, and let rise until double in size, 45 minutes to 1 hour.Preheat the oven to 400 degrees F (200 degrees C).Bake in the preheated oven until golden, about 20 minutes.
